gourmet grilled cheese

brie with tomato slices and green bell pepper on olive focaccia bread. Cooked the sandwich in a skillet with a bit of olive oil and butter press with a bacon press or as i used a saucepan with a large bowl in it that i put my weight on. flipping the sandwich with tongs till bread is browned and cheese melted. Awesome with ranch dressing or mustard vinaigrette.
