olive oil french fries 101

Take one potato and wash it. Cut the potato in half. Laying the flat sides down so they don't move while cutting, cut the two halves into slices. Pour enough olive oil to thinly coat the bottom of a frying pan. Turn on stove to med heat. Place potato slices in frying pan. Use a grease screen to protect yourself from skin burning hot flying popping grease. If you don't have a grease screen you can place a piece of foil over the frying pan. I also suggest wearing cooking mitts the more it covers your arms the better. Flip the slices with tongs when browned to your liking and brown the other side. You can use salt, pepper, a sprinkle of cayenne pepper, and Italian seasonings to season the fries. When individual slices are finished remove them from the frying pan and place on a plate with a couple sheets of paper towels to soak up excess oil.
