apple tartlets

I cooked personal apple tartlets for myself and my husband the other day. They turned out amazingly. I used a crust recipe from a william sinoma cook book, and my own apple pie filling with the ratios changed for the tartlet size. mixed one red apple and one green apple. I made the mix of the cored 8thed apple then slices were 5thed with the spices and sugar in a bowl before scooping into rolled out dough into a circle. Dough was then folded up over filling leaving a small circle of filling showing in the middle.

pear with gruyere cheese crust pie






This is the most amazing pie fresh out of the oven. Reheated, not so much. It may have kept better out of the fridge and reheated in the oven. I served it with homemade bluebell vanilla ice cream, my favorite. I got the Pushing daisies tv show inspired recipe from Blondie and Brownie . Takes 2 days to make because of the crust.
